BIOLOGICAL HAZARDS Food safety
Biological Hazard occur when food gets contaminated by micro-organisms
found in the air, food, water, soil, animals and human body.
Many organisms are essential for life itself, however given the right
conditions; some microorganisms may cause food borne illness.
Microorganisms associated with this hazard include:
Bacteria
Fungi
Yeast
or substances that may pose a threat to human health.
ALLERGENS
An allergen is any substance, eaten or inhaled which cause allergic reaction
due to hypersensitivity of the immune system towards it.
Some common allergenic foods are:
